We don't think you're going to be able to resist making this cake, but if you really don't have the ingredients why not visit the Kingcombe Centre Cafe and tuck into one of the cakes we made earlier!
6oz sugar caster
6oz self raising flour
1 tsp Bi carb
2 tbl lemon curd
2 oz granulated sugar
Cream together butter and sugar, add flour and eggs and mix to a light texture. Add bicarb, lemon curd and lemon rind.
Cook in 2lb lined loaf tin for 25 mins at 180 C
While cake is cooking add granulated sugar and lemon juice to saucepan and cook down until syrup.
Drizzle over totally cooled cake, sprinkle with sugar and decorate with sugared twisted lemon slice
Serve with single cream
