What better way to enjoy summer than with a refreshing and tasty ice-cream recipe! This simple recipe is perfect for a summer dessert that's a little bit different.
Summer Ice cream with pineapple and marshmallows
X 1 bag Marshmallows
X 1 tin of chopped pineapple
X 1 large tub fresh cream (Double cream works best) you could use Elmlea
Icing Sugar to sweeten to taste
Chopped almonds (Optional)
You will need a loaf size container plus some cling film
1 Soak the chopped pineapple and marshmallows and cover preferably over night.
2 Drain the remaining juice into a cup and put to one side
3 lightly whip the cream to soft peaks then mix in the pineapple and marshmallows add icing sugar to sweeten as required. Mix in the chopped almonds keeping back enough to scatter over the top.
4 Place the cling film into the container leaving a big enough overlap to fold over the top.
5 Pour the mixture into your container fold over the cling film and freeze overnight.
